Greystone Pinot Noir

Greystone draws its name from the unique limestone conglomerate. A limestone mix of fossils, sea shells and small pebbles that have been fused together through the seismic movement of North Canterbury. Over time this ancient seabed has been pushed and folded upwards. Pinot Noir famously loves soils with limestone!

It all started in 2004 with Viticulturist Nick Gill and Dom Maxwell became the winemaker and a team was formed in the pursuit of realising the potential of this exceptional site. The north facing limestone hills slope down to clay – the perfect combination for growing wines with minerality and concentration.

The approach is simple and traditional. After careful hand picking the organic fruit is kick started with a wild yeast fermentation. The result is: layers of ripe fruit, florals and spice unfold on the palate with a delicate tannin line and an outstanding finish that is unfined and bottled on site. Set for a long life, it’s well worth cellaring…
